Do I need to delete the eSIM after my trip?

You don't. An expired eSIM does no harm and can stay on the phone; you can delete it later if you like. If you'll return to the same country, you can sometimes add a new plan/top-up to the same profile, so don't rush to delete. If you want to keep your phone tidy, deleting is fine too.
