If I delete the eSIM, is my plan cancelled?

Deleting it doesn't restore the plan's remaining data or days, and because the profile is usually a single-use QR you often can't reload it — so in practice you lose the plan. If the plan is finished, deleting is fine; but if you'll still use it, don't delete — just turn it off temporarily.
